Blueberry Vanilla & Chocolate Jam
Over the holidays we did a mini batch of Blueberry Vanilla and Chocolate Jam using some organic vanilla and chocolate extract, and some local organic blueberries we saved from this summer, it was a big hit and sold out quickly. We decided to make another small batch since it would make a perfect Valentine's Gift! Looks like this one will make it into our regular rotation, once this batch is sold out, look for more this summer when the blueberries are back!

Local Persimmon Marmalade
A seasonal classic returns for a short run through the holidays! Organic oranges and lemons and fuyu persimmons makes this a perrennial favorite of a marmalade. Get it while you can, it won't be around long!

Meyer Lemon Marmalade
Every winter when there is no local fruit available we make marmalade. Meyer lemon is a perennial favorite and thanks to Happy Dirt, our local organic produce wholesaler, we were able to get our hands on some gorgeous biodynamic Meyer Lemons from Marian Farms in Fresno, CA which we made into this delicious and simple marmalade.

Salted Caramel Apple Butter
Slow cooked local apples are combined with organic sugar, sorghum molasses from Muddy Pond Sorghum Mill in Tennessee, vanilla beans and sea salt to create a really special apple butter. It can be dessert (it's delicious on ice cream!) or a great topping for your granola or yogurt. Some people just eat it straight out of the jar!

Blood Orange Marmalade
We've just finished a batch of one of my favorite marmalades! I swoon over blood oranges, not only are they gorgeous, they smell amazing and make truly delicious marmalade! Year after year we have people at the farmers market come specifically for this marmalade, blood oranges have such an unusual and appealing flavor.

N. Michigan Tart Cherries
My husband grew up in a little town on the Leelanau Peninsula of Michigan called Leland. On this narrow peninsula 75% of all the tart cherries in the US are grown and they are delicious! Every summer when we go up to visit we bring back apricots and sometimes black raspberries but it's the tart cherries that everyone waits for. We have one customer that orders 20 pints every year! These preserves are delicious, whole tart cherries in syrup, sweetened just enough, with a hint of vanilla, perfect on ice cream or yogurt, in a mixed drink, in a tart, on a cheese plate or straight out of the jar.

Strawberry & Honeysuckle Jelly
A lot of the time when we roast strawberries for our Roasted Strawberry Preserves there is lots of extra strawberry juice left over from the roasting process. I typically separate the excess juice, and store it in giant jars in the fridge, to save for future projects. One year I used it to make Blueberry Strawberry Jam. I've also made Strawberry Jelly a few times, but not very often, I'm just not really a huge fan of using pectin. There's no particular reason why I don't use pectin very often, I guess I just associate it with the stiff, grocery store preserves I had growing up. I much prefer keeping things simple, just cooking fruit down until it reaches it's own natural set.
To make a long story short, over the years way too much of this rich, flavorful strawberry juice has gone to waste and we amass A LOT. I decided that there was no way I was going waste another drop, so David and I concocted a plan. David picked a ton of honeysuckle, and we then steeped it in the strawberry juice overnight. We turned this glorious mixture into what is technically a jelly, but is really so much more. We even made honeysuckle syrup to use for future batches once the honeysuckle is gone for the season. We're calling it Strawberry & Honeysuckle Jelly even though it should be called a jally (jam and jelly mix) because the juice is so rich and flavorful. We did end up using pectin and I am surprised by how much I am enjoying it, the texture is just right, the flavor is spot on and the color is gorgeous. Actually, I think it's possible this may be my favorite thing we've ever made. And in even more exciting news our Strawberry & Honeysuckle Jelly is a 2020 Good Food Award winner!

Roasted Raspberry Jam
Raspberries are so beautiful and make gorgeous jam. Unfortunately it's just a little to warm in the Piedmont region of North Carolina to grown them reliably, and in any kind of quantity. Over the years I've been able to find some pockets of these beauties, but usually they are far and few between. We recently got our hands on some gorgeous organic berries that we roasted, this deepens their rich flavor before we turn them into jam. For a short time we'll have both 8 oz. and mini 4 oz. versions as well!

Local Blackberry Jam
Local Blackberry Jam - this batch is as local as you can get, it's made with either sustainably grown blackberries from either our friends at Okfuskee Farm, just down the road in Silk Hope, NC OR with blackberries from our neighbors (I can literally see the berries growing out the window, they have gorgeous blueberries too!) at Wild Abandon Farm. Super simple with a berry flavor that shines through. Farm name for each batch is listed on the label.

Orange and Chili Marmalade
A sunny, slightly spicy marmalade made with organic oranges, organic lemons and brightened up a bit with organic limes. We top it off with some heat from of our own dried habaneros making for a fun and flexible treat! Switch things up and use as a sub for pepper jelly poured over cream cheese, use as a glaze for meat, a base for vinaigrette, on a cheese or charcuterie plate, as a great dipping sauce for Asian dumplings, spring rolls or egg rolls, the options are endless!

Black Garlic Rooster Sauce
A winner of a 2021 Good Food Award our Black Garlic Rooster Sauce is currently our most popular hot sauce. With a tiny adjustment, the addition of black garlic, in addition to regular garlic, we take our best selling Rooster Sauce recipe to the next level in taste. A great all purpose hot sauce, that's hot (but not too hot!) and so flavorful. It'll soon be your favorite hot sauce too!

Heartsong Lemon Drop & Aji Pineapple Fire Sauce - NEW

Extremely Hot Fire Sauce
Ghost peppers, Carolina Reapers and Trinidad Scorpions make this one H*LL of a hot sauce. We grow all of the peppers used in this hot sauce right here on the farm using sustainable growing methods. The peppers are harvested, made into hot sauce and bottled all in the same day.

Rooster Sauce is the perfect all purpose hot sauce, not too hot, but definitely hot enough, super flavorful and great on everything. Local Ramp Salt
Black Garlic Salt
Pittsboro, NC , the little town where our farm is located, has the most amazing food community and I am thankful for it every day. Everyone is so generous and a prime example is our friend Angelina, of Angelina's Kitchen, sharing a very special batch of organic black garlic with us. We decided to use this gorgeous black garlic gift and make it into Black Garlic Salt. We combine the black garlic and fresh garlic from local farms with coarse sea salt and dehydrate them together. We were so excited about the black garlic that we immediately went out and bought our own Black Garlic machine (who knew there was such a thing!)
If you've never had black garlic it has a very distinctive flavor that is slightly sweet, and almost a little tangy like balsamic vinegar. The process to make it requires heating whole bulbs of garlic over the course of several weeks, a process that results in the black cloves. The browning is attributable to the Maillard reaction rather than caramelization, and black garlic is often used as an ingredient in Asian cooking. The Black Garlic Salt adds an amazing umami/garlic flavor that is useful in so many dishes. Interesting too is the fact that black garlic also has added health benefits, including twice the amount of antioxidants than in its regular form!

Want to add a little spice to your life? Our Habanero Salt and Orange and Chili Salt are an easy way to spice up any dish. These salts are perfect on corn on the cob, popcorn, the edge of a margarita glass, sprinkled on watermelon or fruit, on eggs, basically they are a great way to add a little heat to anything! Both salts are made with our sustainably grown peppers, and they definitely have some heat! You can use a pinch straight from the jar or put some in a grinder if you like your salt a little finer.
NEW PRODUCT ALERT!
We've added a new salt this week, Hot Sauce Salt! This is the creation of my husband David, the brains behind all of our hot sauces and pepper jellies. He loves hot sauce and puts it on everything, and it was this love that prompted him to ask the question, "what if we made hot sauce salt?" I was unconvinced but when I tasted it, I changed my mind, it's really good! It is a truly unique, the salt has plenty of spice and the delicious bite of vinegar.

While experimenting recently we made a small batch of something really fun for your cheese, or charcuterie tray - Pickled Grapes 🍇! They are so good! Green Garlic Salt
Our Green Garlic Salt is a slightly elevated version of regular garlic salt made with coarse sea salt, either, local garlic/ or organic garlic, and garlic chives from our garden, for color and flavor. Use it just like you would any other garlic salt, either straight out of the jar, or in a grinder if you'd like it a little finer.

Katie's Amazing Soaps
My friend Katie Thornburg is a woman of many talents, if you've ever eaten our granola you have tasted her handiwork. She is also the namesake and mastermind behind our Katie's Blend Granola. Katie and I have been friends since our kids went to preschool together and for the last 4 years or so she has been coming every Friday from 8-12 to make granola or help me make jam. She is supremely creative and one of the things she likes to create is this gorgeous and amazingly fun soap. I love the names and thoughtful ingredient variations. We thought it would be cool to add them on as a gift option for Mother's Day. The base in all of her soaps is a combination of coconut and olive oil and each different variety breaks down any other added ingredients. I'm so excited to be sharing her soap with you!
