Roasted Black Raspberry Jam
Raspberries are so beautiful and make gorgeous jam. Unfortunately it's just a little to warm in the Piedmont region of North Carolina to grown them reliably and in any kind of quantity. Over the years I've been able to find some pockets of these beauties, but usually they are far and few between. This year we scored black raspberries on our annual visit to the Leelanau Peninsula of Michigan. These beauties are from Edmonson Orchards in Grand Traverse County. We roast these gorgeous raspberries to deepen their rich flavor before we turn them into jam.
Ingredients: black raspberries, organic sugar, organic lemon juice, Pomona Pectin
