Black Garlic Salt
Pittsboro, NC , the little town where our farm is located, has the most amazing food community and I am thankful for it every day. Everyone is so generous and a prime example is our friend Angelina, of Angelina's Kitchen, sharing a very special batch of organic black garlic with us. We decided to use this gorgeous black garlic gift and make it into Black Garlic Salt. We combine the black garlic and fresh garlic from local farms with coarse sea salt and dehydrate them together. We were so excited about the black garlic that we immediately went out and bought our own Black Garlic machine (who knew there was such a thing!)
If you've never had black garlic it has a very distinctive flavor that is slightly sweet, and almost a little tangy like balsamic vinegar. The process to make it requires heating whole bulbs of garlic over the course of several weeks, a process that results in the black cloves. The browning is attributable to the Maillard reaction rather than caramelization, and black garlic is often used as an ingredient in Asian cooking. The Black Garlic Salt adds an amazing umami/garlic flavor that is useful in so many dishes. Interesting too is the fact that black garlic also has added health benefits, including twice the amount of antioxidants than in its regular form!
