Roasted Strawberry Preserves
For years we've roasted the peaches for our Roasted Peach Preserves, we found that this technique brought out the natural flavor of the fruit and made the jam quicker to reach its desired consistency. We suspected it might just do the same for strawberries and it did! Our Roasted Strawberry Preserves have a robust, vibrant strawberry flavor, highlighted with just a bit of organic sugar and lemon juice. This is one of our most popular jams and was a 2018 Good Food Awards winner.

Blood Orange Marmalade
We've just finished a batch of one of my favorite marmalades! I swoon over blood oranges, not only are they gorgeous, they smell amazing and make truly delicious marmalade! Year after year we have people at the farmers market come specifically for this marmalade, blood oranges have such an unusual and appealing flavor.

English Marmalade
Our English Marmalade is a perennial market favorite that we're selling online for the first time. It's a tart marmalade made with organic, oranges, lemons and grapefruit finished with organic gin from Mother Earth Spirits in Kinston. We have a steady return of British customers at market who buy it repeatedly so we must be doing something right!!

Strawberry & Honeysuckle Jelly
A lot of the time when we roast strawberries for our Roasted Strawberry Preserves there is lots of extra strawberry juice left over from the roasting process. I typically separate the excess juice, and store it in giant jars in the fridge, to save for future projects. One year I used it to make Blueberry Strawberry Jam. I've also made Strawberry Jelly a few times, but not very often, I'm just not really a huge fan of using pectin. There's no particular reason why I don't use pectin very often, I guess I just associate it with the stiff, grocery store preserves I had growing up. I much prefer keeping things simple, just cooking fruit down until it reaches it's own natural set.
To make a long story short, over the years way too much of this rich, flavorful strawberry juice has gone to waste and we amass A LOT. I decided that there was no way I was going waste another drop, so David and I concocted a plan. David picked a ton of honeysuckle, and we then steeped it in the strawberry juice overnight. We turned this glorious mixture into what is technically a jelly, but is really so much more. We even made honeysuckle syrup to use for future batches once the honeysuckle is gone for the season. We're calling it Strawberry & Honeysuckle Jelly even though it should be called a jally (jam and jelly mix) because the juice is so rich and flavorful. We did end up using pectin and I am surprised by how much I am enjoying it, the texture is just right, the flavor is spot on and the color is gorgeous. Actually, I think it's possible this may be my favorite thing we've ever made. And in even more exciting news our Strawberry & Honeysuckle Jelly is a 2020 Good Food Award winner!

Salted Caramel Apple Butter
Slow cooked local apples are combined with organic sugar, sorghum molasses from Muddy Pond Sorghum Mill in Tennessee, vanilla beans and sea salt to create a really special apple butter. It can be dessert (it's delicious on ice cream!) or a great topping for your granola or yogurt. Some people just eat it straight out of the jar!

Local Ramp Salt
For a week or two early each Spring we are lucky enough to get our hands on foraged ramps from the NC mountains. If you've never tasted a ramp you're in for a treat, their intense garlicky, oniony, chivey flavor is unforgettable and this pungent delicious salt captures the flavor perfectly!

Mushroom Salts
“Umami” is Japanese and means “a pleasant savory taste. It was discovered over a century ago and is best described as a savory or “meaty” flavor. Would you like to easily add a little umami to any dish? Our mushroom salts are the perfect way! We have two different varieties, Morel which is a chef favorite and has a traditional earthy mushroom flavor, or Porcini, used often in Italian cooking, porcini's have a delicious smoky flavor. Black Trumpets are black chanterelles and offer a buttery earthy flavor. Want to add a little spice to your life? Our Love at First Sting Salt and Orange and Chili Salt are an easy way to spice up any dish. These salts are perfect on corn on the cob, popcorn, the edge of a margarita glass, sprinkled on watermelon or fruit, on eggs, basically they are a great way to add a little heat to anything! These salts are made with our sustainably grown peppers, and they definitely have some heat! You can use a pinch straight from the jar or put some in a grinder if you like your salt a little finer.

Extremely Hot Fire Sauce
Ghost peppers, Carolina Reapers and Trinidad Scorpions make this one H*LL of a hot sauce. We grow all of the peppers used in this hot sauce right here on the farm using sustainable growing methods. The peppers are harvested, made into hot sauce and bottled all in the same day.
